Recipe Review: When spring first came rolling through we felt like ice-cream! And so we tried this little beauty. It's quick and easy, too. (Mixed Berry pictured left and Raspberry pictured right)
Cooking time: 5 minutes Serves: 2 bowls or 6 frozen pops
Preheat oven: Food processor only
- 2 cups frozen berries (whatever type you like; we like a mix of blueberries, blackberries, and raspberries)
- ½ cup coconut milk
- 2 tbsp good-quality maple syrup
1. Combine everything in a food processor and pulse until completely smooth.
2. Eat immediately – at this point it has the perfect soft texture; or, freeze and then let it sit at room temperature for 5 – 10 minutes to soften a bit before serving.
To make the striped pops; Make batches of each individual flavour, separate with some coconut milk between layers if you like. Kids will go crazy for these (husbands too!)
No suggestions just play with different flavours each time you make it! We've had it as frozen pops too.
