Preheat oven: Stove top only
1. Bring a pan of water to the boil, then season with salt. Meanwhile pull or chop the broccoli into florets, cutting any larger ones in half. Slice the leeks into rings about 5mm thick.
2. Heat the butter and oil in a frying pan, then add the leeks. Cook for 5 minutes over a medium heat, stirring now and again, until just softened.
3. Meanwhile, put the broccoli into the boiling water. Bring the pan back to the boil, then cook for 2 minutes. Add the peas, then bring everything back to the boil again. The broccoli will be just tender and the peas sweet and bright. Drain well in a colander. Add the peas and broccoli to the frying pan, then toss well with the softened leeks. Season with salt and pepper, then add another knob of butter, if you like.

- 25g butter, plus more to serve if you like
- 1 tsp olive oil
- 300g frozen peas
- salt and pepper
